  • Black pepper - 1/4 teaspoon

  • Feta cheese (crumbled) - 50 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic, sautéing for 1 minute until fragrant.
  3. Add the diced red bell pepper and sliced zucchini to the skillet, cooking for about 5 minutes until they begin to soften.
  4. Stir in the halved cherry tomatoes, paprika, salt, and black pepper, cooking for another 3 minutes.
  5. Add the shrimp to the skillet, mixing well to combine, and cook for an additional 2-3 minutes until they turn pink.
  6. Remove from heat and stir in the lemon juice and chopped parsley.
  7. Transfer the mixture to a baking dish and sprinkle crumbled feta cheese on top.
  8. Bake in the preheated oven for 15 minutes until the dish is bubbly and the cheese is slightly golden.
  9. Serve warm, garnished with extra parsley if desired.
