Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat and add the minced garlic, sautéing for 1 minute until fragrant.
- Add the diced red bell pepper and sliced zucchini to the skillet, cooking for about 5 minutes until they begin to soften.
- Stir in the halved cherry tomatoes, paprika, salt, and black pepper, cooking for another 3 minutes.
- Add the shrimp to the skillet, mixing well to combine, and cook for an additional 2-3 minutes until they turn pink.
- Remove from heat and stir in the lemon juice and chopped parsley.
- Transfer the mixture to a baking dish and sprinkle crumbled feta cheese on top.
- Bake in the preheated oven for 15 minutes until the dish is bubbly and the cheese is slightly golden.
- Serve warm, garnished with extra parsley if desired.
