Ingredients

  • Milk - 500 ml
  • Short-grain rice - 50 g
  • Greek yogurt - 100 g
  • Honey - 30 g
  • Vanilla extract - 1 tsp
  • Cornstarch - 15 g
  • Brown sugar - 30 g
  • Water - 200 ml
  • Salt - a pinch

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 200 ml of water. Cook on medium heat until the water is absorbed and the rice is tender, about 10 minutes.
  2. Add the milk, honey, vanilla extract, and a pinch of salt to the saucepan with the cooked rice. Stir well and bring to a simmer over medium heat, cooking for an additional 10 minutes while stirring occasionally.
  3. In a small bowl, mix the cornstarch with a few tablespoons of cold milk until smooth. Slowly pour this mixture into the saucepan while stirring continuously to thicken the pudding. Cook for another 5 minutes until the mixture is creamy and thickened.
  4. Remove the saucepan from heat and stir in the Greek yogurt until well combined. Divide the mixture into two serving bowls and let it cool to room temperature.
  5. In a small skillet, add the brown sugar over medium heat. Allow it to melt and turn a golden color without stirring. Once melted, quickly pour the caramel over the cooled rice pudding in each bowl. Let it set for a few minutes before serving.
