- Milk - 500 ml
- Short-grain rice - 50 g
- Greek yogurt - 100 g
- Honey - 30 g
- Vanilla extract - 1 tsp
- Cornstarch - 15 g
- Brown sugar - 30 g
- Water - 200 ml
- Salt - a pinch
Steps
- Rinse the short-grain rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 200 ml of water. Cook on medium heat until the water is absorbed and the rice is tender, about 10 minutes.
- Add the milk, honey, vanilla extract, and a pinch of salt to the saucepan with the cooked rice. Stir well and bring to a simmer over medium heat, cooking for an additional 10 minutes while stirring occasionally.
- In a small bowl, mix the cornstarch with a few tablespoons of cold milk until smooth. Slowly pour this mixture into the saucepan while stirring continuously to thicken the pudding. Cook for another 5 minutes until the mixture is creamy and thickened.
- Remove the saucepan from heat and stir in the Greek yogurt until well combined. Divide the mixture into two serving bowls and let it cool to room temperature.
- In a small skillet, add the brown sugar over medium heat. Allow it to melt and turn a golden color without stirring. Once melted, quickly pour the caramel over the cooled rice pudding in each bowl. Let it set for a few minutes before serving.
