- Semolina - 100 grams
- Granulated sugar - 100 grams
- Unsalted butter - 50 grams
- Water - 200 milliliters
- Vanilla extract - 1 teaspoon
- Chopped walnuts - 30 grams
- Cinnamon powder - 1/2 teaspoon
Steps
- In a medium saucepan, melt the unsalted butter over medium heat until it starts to foam.
- Add the semolina to the melted butter and stir continuously for about 5-7 minutes until the mixture turns golden brown.
- In a separate saucepan, combine the water, granulated sugar, vanilla extract, and cinnamon. Bring to a boil, then reduce the heat and simmer for another 5 minutes until slightly syrupy.
- Carefully pour the hot syrup into the semolina mixture, stirring constantly to avoid lumps.
- Continue to cook the mixture on low heat for another 5-10 minutes, stirring until it thickens and pulls away from the sides of the pan.
- Once thickened, remove from heat and fold in the chopped walnuts.
- Transfer the helva into a greased mold or serving dish, smoothing the top with a spatula.
- Allow it to cool for a few minutes before slicing and serving warm.
