Ingredients

  • Hazelnuts - 100 grams
  • Granulated sugar - 75 grams
  • Water - 30 ml
  • Unsalted butter - 10 grams
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F) and spread the hazelnuts on a baking sheet. Roast them in the oven for about 10 minutes, or until golden brown and fragrant.
  2. In a medium saucepan, combine the sugar and water over medium heat. Stir until the sugar dissolves completely.
  3. Once the sugar mixture starts to simmer, stop stirring and allow it to bubble until it turns a light amber color, about 5-7 minutes.
  4. Remove the saucepan from heat and quickly add the butter, vanilla extract, and a pinch of salt. Stir until the butter is fully melted and combined.
  5. Add the roasted hazelnuts to the caramel sauce and stir to coat them evenly.
  6. Spread the caramelized hazelnuts back onto the baking sheet and let them cool completely before serving.
