- Fresh parsley - 2 tablespoons, chopped
- Cherry tomatoes - 150 grams, halved
- Zucchini - 1 medium, sliced
- Red onion - 1 small, sliced
Steps
- In a bowl, mix olive oil, lemon juice, minced garlic, paprika, salt, and black pepper to create a marinade.
- Add the flounder fillets to the marinade, ensuring they are well-coated. Let marinate for at least 10 minutes.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the marinated flounder fillets to the skillet and cook for about 4-5 minutes on each side or until golden brown and cooked through.
- While the fish is cooking, add the sliced red onion and zucchini to the skillet, cooking for about 3-4 minutes until softened.
- Add the halved cherry tomatoes to the skillet and cook for an additional 2 minutes.
- Once everything is cooked, sprinkle chopped parsley over the dish before serving.
