  • Garlic - 3 cloves, minced
  • Onion - 1 medium, thinly sliced
  • Tomato - 1 medium, diced
  • Red bell pepper - 1 medium, sliced
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 150 ml

Steps

  1. In a large skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  2. Add the sliced onion and red bell pepper to the skillet, cooking until the onion is soft and translucent, approximately 5 minutes.
  3. Stir in the diced tomato, salt, and black pepper, cooking for another 3 minutes until the tomatoes begin to break down.
  4. Place the flounder fillets on top of the vegetable mixture and drizzle with lemon juice.
