- Semolina - 100 grams
- Sugar - 50 grams
- Water - 250 milliliters
- Instant coffee - 1 tablespoon
- Unsalted margarine - 30 grams
- Pistachios (chopped) - 20 grams
- Cinnamon powder - 1/4 teaspoon
- Vanilla extract - 1/2 teaspoon
Steps
- In a saucepan, combine 250 ml of water and 50 grams of sugar. Heat over medium until the sugar dissolves completely.
- Stir in 1 tablespoon of instant coffee and 1/2 teaspoon of vanilla extract into the sugar-water mixture until well combined, then set aside.
- In another saucepan, melt 30 grams of unsalted margarine over medium heat. Add 100 grams of semolina and toast it, stirring constantly, until it turns golden brown and fragrant (about 5-7 minutes).
- Slowly pour the coffee-sugar mixture into the toasted semolina while stirring continuously to prevent lumps from forming.
- Cook the mixture on low heat for about 10 minutes, stirring frequently, until it thickens to a pudding-like consistency.
- Remove from heat and pour the mixture into two serving dishes. Smooth the tops with a spatula.
- Allow to cool at room temperature for about 15 minutes, then refrigerate for at least 1 hour before serving.
- Before serving, sprinkle with chopped pistachios and a pinch of cinnamon.
