Ingredients

  • Semolina - 100 grams
  • Sugar - 50 grams
  • Water - 250 milliliters
  • Instant coffee - 1 tablespoon
  • Unsalted margarine - 30 grams
  • Pistachios (chopped) - 20 grams
  • Cinnamon powder - 1/4 teaspoon
  • Vanilla extract - 1/2 teaspoon

Steps

  1. In a saucepan, combine 250 ml of water and 50 grams of sugar. Heat over medium until the sugar dissolves completely.
  2. Stir in 1 tablespoon of instant coffee and 1/2 teaspoon of vanilla extract into the sugar-water mixture until well combined, then set aside.
  3. In another saucepan, melt 30 grams of unsalted margarine over medium heat. Add 100 grams of semolina and toast it, stirring constantly, until it turns golden brown and fragrant (about 5-7 minutes).
  4. Slowly pour the coffee-sugar mixture into the toasted semolina while stirring continuously to prevent lumps from forming.
  5. Cook the mixture on low heat for about 10 minutes, stirring frequently, until it thickens to a pudding-like consistency.
  6. Remove from heat and pour the mixture into two serving dishes. Smooth the tops with a spatula.
  7. Allow to cool at room temperature for about 15 minutes, then refrigerate for at least 1 hour before serving.
  8. Before serving, sprinkle with chopped pistachios and a pinch of cinnamon.
