Ingredients

  • Semolina - 100 grams
  • Granulated sugar - 75 grams
  • Plain yogurt - 50 grams
  • Eggs - 1 large
  • Baking powder - 1 teaspoon
  • Instant coffee - 2 teaspoons
  • Vanilla extract - 1 teaspoon
  • All-purpose flour - 50 grams
  • Butter - 50 grams (melted)
  • Water - 150 ml
  • Granulated sugar (for syrup) - 100 grams
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F). Grease a small baking dish (about 20x20 cm) with butter.
  2. In a mixing bowl, whisk together the eggs and sugar until light and fluffy.
  3. Add the yogurt, melted butter, and vanilla extract to the egg mixture, and mix well.
  4. In another bowl, combine the semolina, flour, baking powder, and instant coffee. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  5. Pour the batter into the prepared baking dish and smooth the top with a spatula.
  6. Bake in the preheated oven for about 30-35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  7. While the cake is baking, prepare the syrup by bringing water, sugar, and lemon juice to a boil in a saucepan. Reduce the heat and let it simmer for 10 minutes, then remove from heat and let cool.
  8. Once the cake is done, remove it from the oven and immediately pour the cooled syrup over the hot cake, ensuring it absorbs well.
  9. Let the cake rest for at least 15 minutes before slicing and serving.
