Ingredients

  • Feta cheese - 100 grams
  • Kasseri cheese - 100 grams
  • Kalamata olives - 50 grams
  • Cherry tomatoes - 150 grams
  • Cucumber - 1 medium
  • Bell pepper (red or yellow) - 1 medium
  • Radishes - 6 small
  • Fresh parsley - 30 grams
  • Fresh mint - 30 grams
  • Eggs - 4 large
  • Turkish bread (or simit) - 2 pieces
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Dried oregano - 1 teaspoon

Steps

  1. Begin by washing all the fresh vegetables thoroughly. Cut the cucumber and bell pepper into thin slices, and halve the cherry tomatoes.
  2. Arrange the sliced cucumber, bell pepper, halved cherry tomatoes, and radishes neatly on a serving plate.
  3. Crumble the feta cheese and slice the kasseri cheese into sticks, then add them to the plate along with the kalamata olives.
  4. In a small bowl, mix the chopped fresh parsley and mint with a drizzle of olive oil, salt, and black pepper. Set aside.
  5. In a skillet, heat a tablespoon of olive oil over medium heat. Crack the eggs into the skillet and season with salt, black pepper, and dried oregano. Cook to your desired doneness (sunny-side up or scrambled).
  6. While the eggs are cooking, toast the Turkish bread until golden brown.
  7. Once the eggs are ready, place them on the serving plate next to the vegetables and cheeses.
  8. Add the herb mixture to the plate and serve everything with the toasted Turkish bread.
