- Kasseri cheese - 100 grams
- Kalamata olives - 50 grams
- Cherry tomatoes - 150 grams
- Cucumber - 1 medium
- Bell pepper (red or yellow) - 1 medium
- Radishes - 6 small
- Fresh parsley - 30 grams
- Fresh mint - 30 grams
- Eggs - 4 large
- Turkish bread (or simit) - 2 pieces
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Dried oregano - 1 teaspoon
Steps
- Begin by washing all the fresh vegetables thoroughly. Cut the cucumber and bell pepper into thin slices, and halve the cherry tomatoes.
- Arrange the sliced cucumber, bell pepper, halved cherry tomatoes, and radishes neatly on a serving plate.
- Crumble the feta cheese and slice the kasseri cheese into sticks, then add them to the plate along with the kalamata olives.
- In a small bowl, mix the chopped fresh parsley and mint with a drizzle of olive oil, salt, and black pepper. Set aside.
- In a skillet, heat a tablespoon of olive oil over medium heat. Crack the eggs into the skillet and season with salt, black pepper, and dried oregano. Cook to your desired doneness (sunny-side up or scrambled).
- While the eggs are cooking, toast the Turkish bread until golden brown.
- Once the eggs are ready, place them on the serving plate next to the vegetables and cheeses.
- Add the herb mixture to the plate and serve everything with the toasted Turkish bread.
