Ingredients
- Pide dough - 250 grams
- Olive oil - 2 tablespoons
- Bell pepper (red or green) - 1 (diced)
- Tomato - 1 (diced)
- Red onion - 1 small (finely chopped)
- Spinach - 100 grams (fresh, chopped)
- Feta cheese - 100 grams (crumbled)
- Black olives - 50 grams (sliced)
- Egg - 1
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dried oregano - 1/2 teaspoon
Steps
- Preheat your oven to 220°C (428°F).
- In a large mixing bowl, combine the diced bell pepper, tomato, red onion, chopped spinach, feta cheese, sliced olives, salt, black pepper, and dried oregano. Mix well to combine all ingredients.
- Roll out the pide dough on a floured surface into an oval shape, about 1 cm thick.
- Transfer the rolled dough onto a baking sheet lined with parchment paper.
- Spoon the vegetable and cheese mixture onto the center of the dough, leaving about 2 cm of space around the edges.
- Fold the edges of the dough over the filling to create a boat shape, pinching the ends to seal.
- Make a small indentation in the center of the filling and crack the egg into it.
- Drizzle olive oil over the top of the pide and place it in the preheated oven.
- Bake for 15-20 minutes or until the dough is golden brown and the egg is cooked to your liking.
- Remove from the oven, let it cool slightly, and serve warm.
