Ingredients

  • Pide dough - 250 grams
  • Olive oil - 2 tablespoons
  • Bell pepper (red or green) - 1 (diced)
  • Tomato - 1 (diced)
  • Red onion - 1 small (finely chopped)
  • Spinach - 100 grams (fresh, chopped)
  • Feta cheese - 100 grams (crumbled)
  • Black olives - 50 grams (sliced)
  • Egg - 1
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dried oregano - 1/2 teaspoon

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a large mixing bowl, combine the diced bell pepper, tomato, red onion, chopped spinach, feta cheese, sliced olives, salt, black pepper, and dried oregano. Mix well to combine all ingredients.
  3. Roll out the pide dough on a floured surface into an oval shape, about 1 cm thick.
  4. Transfer the rolled dough onto a baking sheet lined with parchment paper.
  5. Spoon the vegetable and cheese mixture onto the center of the dough, leaving about 2 cm of space around the edges.
  6. Fold the edges of the dough over the filling to create a boat shape, pinching the ends to seal.
  7. Make a small indentation in the center of the filling and crack the egg into it.
  8. Drizzle olive oil over the top of the pide and place it in the preheated oven.
  9. Bake for 15-20 minutes or until the dough is golden brown and the egg is cooked to your liking.
  10. Remove from the oven, let it cool slightly, and serve warm.
