Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.

  4. Add the diced carrot and bell pepper, cooking for about 5 minutes until they begin to soften.
  5. Mix in the diced zucchini and chopped tomato, cooking for an additional 5 minutes.

  7. Reduce the heat to a simmer and add the cooked chickpeas, salt, black pepper, and paprika.
  8. Let the soup simmer for 10-15 minutes to allow the flavors to meld.
  9. Stir in the chopped parsley and lemon juice just before serving.
