  • Black pepper - 1/4 teaspoon

Steps

  1. In a medium bowl, whisk the eggs with salt and black pepper until well combined.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add the diced red and green bell peppers to the skillet and sauté for 2-3 minutes until slightly softened.
  4. Stir in the chopped spinach and diced tomato, cooking for an additional 2 minutes until the spinach wilts.
