Ingredients

  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - for frying (about 3 tablespoons)

Steps

  1. Grate the zucchini, carrot, and potato using a box grater or food processor. Place the grated vegetables in a clean kitchen towel and squeeze out excess moisture.
  2. In a mixing bowl, combine the grated zucchini, carrot, potato, and add the egg, flour, dill, parsley, feta cheese, salt, and black pepper. Mix until well combined.
  3. Heat olive oil in a non-stick frying pan over medium heat. Once hot, scoop about 2 tablespoons of the vegetable mixture and shape it into a patty.
  4. Place the patty in the pan and flatten it slightly. Repeat with the remaining mixture, ensuring not to overcrowd the pan.
