- Potato - 100 grams (about 1 small potato)
- Egg - 1 large
- All-purpose flour - 3 tablespoons (about 30 grams)
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - for frying (about 3 tablespoons)
Steps
- Grate the zucchini, carrot, and potato using a box grater or food processor. Place the grated vegetables in a clean kitchen towel and squeeze out excess moisture.
- In a mixing bowl, combine the grated zucchini, carrot, potato, and add the egg, flour, dill, parsley, feta cheese, salt, and black pepper. Mix until well combined.
- Heat olive oil in a non-stick frying pan over medium heat. Once hot, scoop about 2 tablespoons of the vegetable mixture and shape it into a patty.
- Place the patty in the pan and flatten it slightly. Repeat with the remaining mixture, ensuring not to overcrowd the pan.
- Cook each patty for about 3-4 minutes on each side or until golden brown. Remove from the pan and drain on paper towels.
- Serve warm with yogurt, fresh bread, or a side salad.
