Ingredients

  • Cucumber - 1 medium, sliced

  • Radish - 4, thinly sliced
  • Black olives - 100 grams
  • Green olives - 100 grams
  • Feta cheese - 100 grams, crumbled
  • Labneh (or yogurt) - 100 grams
  • Eggs - 2, boiled or poached
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Start by boiling the eggs in a small pot for about 8-10 minutes until hard-boiled. Once done, transfer them to an ice bath to cool.
  2. While the eggs are cooling, prepare the vegetables by slicing the cucumber, tomato, bell pepper, and radish.
  3. On a serving platter, arrange the sliced vegetables, black and green olives, and crumbled feta cheese aesthetically.
  4. Scoop the labneh or yogurt into a small bowl and drizzle with olive oil, then season with salt and black pepper.
  5. Peel and cut the boiled eggs in halves or quarters, and place them on the platter.
  6. Garnish the entire platter with fresh parsley before serving.
