- Red bell peppers - 2 large
- Ripe tomatoes - 2 medium
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Red pepper flakes - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Cut the red bell peppers in half, remove the seeds, and place them cut-side down on a baking sheet.
- Roast the peppers in the oven for 20 minutes, or until the skins are blistered and charred.
- While the peppers are roasting, chop the tomatoes and garlic.
- In a skillet, heat the olive oil over medium heat, add the chopped tomatoes, garlic, salt, black pepper, and red pepper flakes. Cook for 5-7 minutes until the tomatoes are soft.
- Remove the roasted peppers from the oven and let them cool slightly. Peel off the charred skin and chop the peppers.
- Add the chopped peppers to the skillet with the tomato mixture and stir well.
- Remove from heat, add lemon juice, and mix in the fresh parsley.
- Allow the mixture to cool slightly before serving.
