Ingredients

  • Red bell peppers - 2 large
  • Ripe tomatoes - 2 medium
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Red pepper flakes - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the red bell peppers in half, remove the seeds, and place them cut-side down on a baking sheet.
  3. Roast the peppers in the oven for 20 minutes, or until the skins are blistered and charred.
  4. While the peppers are roasting, chop the tomatoes and garlic.
  5. In a skillet, heat the olive oil over medium heat, add the chopped tomatoes, garlic, salt, black pepper, and red pepper flakes. Cook for 5-7 minutes until the tomatoes are soft.
  6. Remove the roasted peppers from the oven and let them cool slightly. Peel off the charred skin and chop the peppers.
  7. Add the chopped peppers to the skillet with the tomato mixture and stir well.
  8. Remove from heat, add lemon juice, and mix in the fresh parsley.
  9. Allow the mixture to cool slightly before serving.
