- All-purpose flour - 250 grams
- Yeast - 7 grams
- Warm water - 120 ml
- Olive oil - 30 ml
- Salt - 5 grams
- Sugar - 5 grams
- Feta cheese - 100 grams, crumbled
- Spinach - 100 grams, chopped
- Black pepper - 2 grams
- Sesame seeds - 10 grams (for topping)
- Egg - 1 (for egg wash)
Steps
- In a bowl, combine warm water, sugar, and yeast. Allow to sit for 10 minutes until frothy.
- In a large mixing bowl, mix the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Knead the dough for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
- While the dough is rising, prepare the filling by combining the crumbled feta cheese, chopped spinach, and black pepper in a bowl.
- Once the dough has doubled in size, punch it down and divide into two equal portions.
- Roll out each portion into a circle about 20 cm in diameter on a floured surface.
- Place half of the filling mixture on one half of each circle, leaving a small border around the edge.
- Fold the dough over to encase the filling, and pinch the edges to seal. You can crimp the edges with a fork for a decorative touch.
- Preheat the oven to 180°C (350°F).
- Beat the egg and brush it over the top of each pastry. Sprinkle sesame seeds on top.
- Place the pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
- Allow to cool slightly before serving warm.
