Ingredients

  • All-purpose flour - 250 grams
  • Yeast - 7 grams
  • Warm water - 120 ml
  • Olive oil - 30 ml
  • Salt - 5 grams
  • Sugar - 5 grams
  • Feta cheese - 100 grams, crumbled
  • Spinach - 100 grams, chopped
  • Black pepper - 2 grams
  • Sesame seeds - 10 grams (for topping)
  • Egg - 1 (for egg wash)

Steps

  1. In a bowl, combine warm water, sugar, and yeast. Allow to sit for 10 minutes until frothy.
  2. In a large mixing bowl, mix the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
  4. While the dough is rising, prepare the filling by combining the crumbled feta cheese, chopped spinach, and black pepper in a bowl.
  5. Once the dough has doubled in size, punch it down and divide into two equal portions.
  6. Roll out each portion into a circle about 20 cm in diameter on a floured surface.
  7. Place half of the filling mixture on one half of each circle, leaving a small border around the edge.
  8. Fold the dough over to encase the filling, and pinch the edges to seal. You can crimp the edges with a fork for a decorative touch.
  9. Preheat the oven to 180°C (350°F).
  10. Beat the egg and brush it over the top of each pastry. Sprinkle sesame seeds on top.
  11. Place the pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
  12. Allow to cool slightly before serving warm.
