- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, cut into wedges
Steps
- Peel and dice the potatoes into small cubes, about 1 cm in size.
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion to the skillet and sauté for 3-4 minutes until translucent.
- Add the diced red and green bell peppers, and cook for another 3-4 minutes until softened.
- Stir in the minced garlic, paprika, cumin, salt, and black pepper, cooking for an additional minute until fragrant.
- Add the diced potatoes to the skillet, stirring well to combine with the other ingredients.
- Cover the skillet and cook for 15-20 minutes, stirring occasionally, until the potatoes are golden brown and tender.
- Once cooked, remove from heat and stir in chopped fresh parsley.
- Serve warm with lemon wedges on the side.
