Ingredients

  • Green bell pepper - 1 medium, diced

  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon

  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, cut into wedges

Steps

  1. Peel and dice the potatoes into small cubes, about 1 cm in size.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the chopped onion to the skillet and sauté for 3-4 minutes until translucent.
  4. Add the diced red and green bell peppers, and cook for another 3-4 minutes until softened.
  5. Stir in the minced garlic, paprika, cumin, salt, and black pepper, cooking for an additional minute until fragrant.
  6. Add the diced potatoes to the skillet, stirring well to combine with the other ingredients.
  7. Cover the skillet and cook for 15-20 minutes, stirring occasionally, until the potatoes are golden brown and tender.
  8. Once cooked, remove from heat and stir in chopped fresh parsley.
  9. Serve warm with lemon wedges on the side.
