Ingredients
- Zucchini - 200 grams, grated
- Carrot - 100 grams, grated
- Onion - 50 grams, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Egg - 1 large
- Whole wheat flour - 30 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
Steps
- In a large bowl, mix the grated zucchini, grated carrot, and chopped onion. Add a pinch of salt and let it sit for about 10 minutes to release excess moisture.
- After 10 minutes, squeeze the mixture to remove excess water and return it to the bowl.
- Add the chopped parsley, dill, egg, whole wheat flour, baking powder, black pepper, and salt to the mixture. Stir until well combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Spoon about 2 tablespoons of the mixture into the skillet for each fritter, flattening them slightly with the back of the spoon.
- Cook for about 3-4 minutes on each side, or until golden brown. Repeat with the remaining mixture, adding more olive oil as needed.
- Serve warm with yogurt or a fresh salad on the side.
