Ingredients

  • Zucchini - 200 grams, grated
  • Carrot - 100 grams, grated
  • Onion - 50 grams, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Egg - 1 large
  • Whole wheat flour - 30 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)

Steps

  1. In a large bowl, mix the grated zucchini, grated carrot, and chopped onion. Add a pinch of salt and let it sit for about 10 minutes to release excess moisture.
  2. After 10 minutes, squeeze the mixture to remove excess water and return it to the bowl.
  3. Add the chopped parsley, dill, egg, whole wheat flour, baking powder, black pepper, and salt to the mixture. Stir until well combined.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  5. Spoon about 2 tablespoons of the mixture into the skillet for each fritter, flattening them slightly with the back of the spoon.
  6. Cook for about 3-4 minutes on each side, or until golden brown. Repeat with the remaining mixture, adding more olive oil as needed.
  7. Serve warm with yogurt or a fresh salad on the side.
