Ingredients
- Dried white beans - 150 grams
- Water - 500 ml (plus extra for soaking)
- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Tomato - 1 medium, chopped
- Green bell pepper - 1 small, diced
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the dried white beans under cold water and soak them in a bowl with enough water to cover for at least 8 hours or overnight.
- Drain and rinse the soaked beans, then place them in a pot with 500 ml of fresh water. Bring to a boil, then reduce heat and simmer for about 45 minutes or until tender. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced green bell pepper to the skillet and cook for another 3 minutes until softened.
- Stir in the chopped tomato, red pepper flakes, salt, and black pepper. Cook for an additional 5 minutes until the tomato is soft.
- Add the cooked beans to the skillet and gently stir to combine. Cook for another 5-10 minutes on low heat to allow the flavors to meld.
- Serve hot, garnished with fresh parsley.
