- Large potatoes - 2
- Greek yogurt - 100 grams
- Cottage cheese - 100 grams
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Paprika - 1 teaspoon
Steps
- Preheat the oven to 200°C (392°F).
- Wash the potatoes thoroughly and poke several holes in each with a fork.
- Place the potatoes on a baking tray and bake for about 45-50 minutes, or until tender.
- While the potatoes are baking, prepare the toppings by mixing the Greek yogurt, cottage cheese, chopped parsley, salt, black pepper, and paprika in a bowl.
- Once the potatoes are cooked, remove them from the oven and let them cool slightly.
- Slice each potato in half lengthwise and carefully scoop out some of the flesh to create a hollow.
- Fill each potato half with the yogurt and cheese mixture, then top with diced cucumber, cherry tomatoes, and green bell pepper.
- Drizzle olive oil over the filled potatoes and sprinkle with additional salt and pepper if desired.
