Ingredients

  • Large potatoes - 2
  • Greek yogurt - 100 grams
  • Cottage cheese - 100 grams
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Paprika - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (392°F).
  2. Wash the potatoes thoroughly and poke several holes in each with a fork.
  3. Place the potatoes on a baking tray and bake for about 45-50 minutes, or until tender.
  4. While the potatoes are baking, prepare the toppings by mixing the Greek yogurt, cottage cheese, chopped parsley, salt, black pepper, and paprika in a bowl.
  5. Once the potatoes are cooked, remove them from the oven and let them cool slightly.
  6. Slice each potato in half lengthwise and carefully scoop out some of the flesh to create a hollow.
  7. Fill each potato half with the yogurt and cheese mixture, then top with diced cucumber, cherry tomatoes, and green bell pepper.
  8. Drizzle olive oil over the filled potatoes and sprinkle with additional salt and pepper if desired.
