- Fresh parsley - 30 grams, chopped
- Fresh mint - 10 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Tomato paste - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/2 teaspoon
Steps
- In a bowl, place the fine bulgur and pour the boiling water over it. Cover and let it sit for about 10 minutes until the bulgur absorbs the water and becomes tender.
- Fluff the bulgur with a fork to separate the grains.
- Add the chopped tomato, cucumber, red bell pepper, spring onion, parsley, and mint to the bulgur.
- In a small bowl, mix the olive oil, lemon juice, tomato paste, salt, black pepper, and red pepper flakes to create the dressing.
