Ingredients

  • Fine bulgur - 100 grams
  • Boiling water - 150 ml
  • Tomato - 1 medium, finely chopped
  • Cucumber - 1 small, finely chopped
  • Red bell pepper - 1 small, finely chopped
  • Spring onion - 2 stalks, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 10 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Tomato paste - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/2 teaspoon

Steps

  1. In a bowl, place the fine bulgur and pour the boiling water over it. Cover and let it sit for about 10 minutes until the bulgur absorbs the water and becomes tender.
  2. Fluff the bulgur with a fork to separate the grains.
  3. Add the chopped tomato, cucumber, red bell pepper, spring onion, parsley, and mint to the bulgur.
  4. In a small bowl, mix the olive oil, lemon juice, tomato paste, salt, black pepper, and red pepper flakes to create the dressing.
  5. Pour the dressing over the bulgur and vegetable mixture, and toss gently until everything is well combined.
  6. Let the Kısır sit for at least 5 minutes to allow the flavors to meld before serving.
