Ingredients

  • Ripe tomatoes - 4 medium
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the tomatoes and slice them in half horizontally.
  3. In a bowl, mix the olive oil, minced garlic, dried oregano, salt, and black pepper.
  4. Place the tomato halves cut-side up on a baking sheet and brush them generously with the olive oil mixture.
  5. Roast the tomatoes in the preheated oven for 20-25 minutes, until they are tender and slightly caramelized.
  6. Remove the tomatoes from the oven and sprinkle crumbled feta cheese on top.
  7. Return to the oven for an additional 5 minutes to warm the cheese slightly.
  8. Garnish with chopped fresh parsley before serving.
