Ingredients

  • Red bell peppers - 2 medium
  • Eggs - 4 large
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the tops off the red bell peppers and remove the seeds and membranes.
  3. In a bowl, whisk the eggs and then add crumbled feta cheese, chopped parsley, salt, black pepper, and paprika. Mix well.
  4. Drizzle olive oil inside each bell pepper and then carefully fill them with the egg and feta mixture.
  5. Place the stuffed peppers upright in a baking dish and pour a little water into the bottom of the dish to help steam the peppers.
  6. Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the peppers are tender.
  7. Remove from the oven and let cool slightly before serving.
