- Red bell peppers - 2 medium
- Eggs - 4 large
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- Cut the tops off the red bell peppers and remove the seeds and membranes.
- In a bowl, whisk the eggs and then add crumbled feta cheese, chopped parsley, salt, black pepper, and paprika. Mix well.
- Drizzle olive oil inside each bell pepper and then carefully fill them with the egg and feta mixture.
- Place the stuffed peppers upright in a baking dish and pour a little water into the bottom of the dish to help steam the peppers.
- Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the peppers are tender.
- Remove from the oven and let cool slightly before serving.
