Steps
- In a large mixing bowl, combine gluten-free flour, baking powder, and salt.
- In a separate bowl, mix together the egg, yogurt, and olive oil until smooth.
- Gradually add the wet mixture to the dry ingredients, stirring until a dough forms.
- Knead the dough gently on a floured surface until smooth, then let it rest for 10 minutes.
- Preheat your oven to 180°C (350°F).
- Roll out the dough to about 1/4 inch thickness and cut it into circles (about 10 cm in diameter).
- In a bowl, mix the crumbled feta cheese, chopped parsley, and black pepper.
- Place a spoonful of the cheese mixture in the center of each dough circle.
- Fold the dough over to create a half-moon shape and seal the edges by pressing down with a fork.
- Place the filled böreks on a baking tray lined with parchment paper.
- Brush the tops with a little olive oil and sprinkle sesame seeds on top.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
