- Dried white beans - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Canned diced tomatoes - 200 grams
- Red bell pepper - 1, diced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Water - 500 ml
- Fresh parsley - for garnish
Steps
- Rinse the dried white beans under cold water and soak them in a bowl with enough water to cover for at least 6 hours or overnight.
- Drain and rinse the soaked beans, then place them in a pot with 500 ml of fresh water. Bring to a boil and simmer for about 30 minutes until slightly tender. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced red bell pepper to the skillet, cooking for another 3-4 minutes until softened.
- Stir in the tomato paste and canned diced tomatoes. Season with salt, black pepper, and paprika. Cook for about 5 minutes, allowing the flavors to meld.
- Add the cooked beans to the skillet, mixing well. Pour in an additional 250 ml of water if needed to achieve your desired consistency.
- Cover and simmer on low heat for 20-30 minutes, stirring occasionally, until the beans are fully tender and the sauce thickens.
- Serve warm, garnished with fresh parsley alongside crusty bread.
