Ingredients

  • Dried white beans - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Canned diced tomatoes - 200 grams
  • Red bell pepper - 1, diced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Water - 500 ml
  • Fresh parsley - for garnish

Steps

  1. Rinse the dried white beans under cold water and soak them in a bowl with enough water to cover for at least 6 hours or overnight.
  2. Drain and rinse the soaked beans, then place them in a pot with 500 ml of fresh water. Bring to a boil and simmer for about 30 minutes until slightly tender. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and diced red bell pepper to the skillet, cooking for another 3-4 minutes until softened.
  5. Stir in the tomato paste and canned diced tomatoes. Season with salt, black pepper, and paprika. Cook for about 5 minutes, allowing the flavors to meld.
  6. Add the cooked beans to the skillet, mixing well. Pour in an additional 250 ml of water if needed to achieve your desired consistency.
  7. Cover and simmer on low heat for 20-30 minutes, stirring occasionally, until the beans are fully tender and the sauce thickens.
  8. Serve warm, garnished with fresh parsley alongside crusty bread.
