Ingredients

  • Large potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 100 grams, diced
  • Red bell pepper - 1, diced
  • Kalamata olives - 50 grams, pitted and halved
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly, then prick them several times with a fork to allow steam to escape.
  3. Rub the potatoes with olive oil and sprinkle with salt. Place them on a baking sheet.
  4. Bake the potatoes in the preheated oven for about 45-50 minutes, or until tender when pierced with a fork.
  5. While the potatoes are baking, prepare the filling. In a bowl, combine the cherry tomatoes, cucumber, red bell pepper, Kalamata olives, feta cheese, parsley, paprika, and lemon juice. Mix gently to combine and set aside.
  6. Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
  7. Slice each potato in half lengthwise and gently scoop out some of the flesh to create space for the filling.
  8. Fill each potato half with the vegetable and cheese mixture.
  9. Serve warm, garnished with additional parsley if desired.
