Ingredients
- Large potatoes - 2
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 100 grams, halved
- Cucumber - 100 grams, diced
- Red bell pepper - 1, diced
- Kalamata olives - 50 grams, pitted and halved
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Paprika - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly, then prick them several times with a fork to allow steam to escape.
- Rub the potatoes with olive oil and sprinkle with salt. Place them on a baking sheet.
- Bake the potatoes in the preheated oven for about 45-50 minutes, or until tender when pierced with a fork.
- While the potatoes are baking, prepare the filling. In a bowl, combine the cherry tomatoes, cucumber, red bell pepper, Kalamata olives, feta cheese, parsley, paprika, and lemon juice. Mix gently to combine and set aside.
- Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
- Slice each potato in half lengthwise and gently scoop out some of the flesh to create space for the filling.
- Fill each potato half with the vegetable and cheese mixture.
- Serve warm, garnished with additional parsley if desired.
