  • Green onions - 2, chopped
  • Kalamata olives - 50 grams, sliced
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 small, diced
  • Fresh parsley - a handful, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and scrub the potatoes thoroughly, then pat them dry.
  3. Prick the potatoes several times with a fork to allow steam to escape.
  4. Rub the potatoes with olive oil, salt, and black pepper.
  5. Place the potatoes on a baking sheet and bake in the preheated oven for 45-50 minutes, or until tender.
  6. Once cooked, remove the potatoes from the oven and let them cool for a few minutes.
  7. Carefully cut a slit down the center of each potato and gently fluff the insides with a fork.
  8. Add butter, grated cheddar cheese, and sour cream to the potato, mixing well.
