Ingredients

  • Ground lamb - 250 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Eggs - 2 large
  • Tomato - 1 large, sliced
  • Cucumber - 1 small, sliced
  • Plain yogurt - 100 grams

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a large bowl, combine the ground lamb, chopped onion, minced garlic, diced red bell pepper, chopped parsley, cumin, paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  3. Shape the meat mixture into two oval kebabs and place them on a baking tray lined with parchment paper.
  4. Drizzle olive oil over the kebabs and bake in the preheated oven for about 20 minutes, or until browned and cooked through.
  5. While the kebabs are baking, prepare the salad by slicing the tomato and cucumber. Arrange them on a plate.
  6. Once the kebabs are done, remove them from the oven and let them rest for 5 minutes.
  7. Fry the eggs in a non-stick pan to your desired doneness.
  8. Serve the kebabs hot with the salad and a dollop of plain yogurt alongside the fried eggs.
