Ingredients

  • Zucchini - 200 grams
  • Eggplant - 150 grams
  • Bell pepper (red or green) - 100 grams
  • Potato - 150 grams
  • Onion - 50 grams
  • Garlic - 2 cloves
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons (chopped)

Steps

  1. Wash and peel the potato, zucchini, and eggplant. Cut all the vegetables into small, bite-sized pieces.
  2. Finely chop the onion and garlic.
  3. Heat olive oil in a large skillet over medium heat and add the chopped onion and garlic. Sauté until they are soft and translucent, about 3-4 minutes.
  4. Add the potato to the skillet and cook for about 5 minutes, stirring occasionally, until it starts to soften.
  5. Add the eggplant, zucchini, and bell pepper to the skillet. Season with salt, black pepper, and paprika. Cook for another 10-12 minutes, stirring occasionally until all vegetables are tender and slightly golden.
  6. Once the vegetables are cooked, sprinkle fresh parsley on top and mix well. Adjust seasoning if needed.
  7. Serve hot on a plate, and enjoy your Kahvaltı Kızartması with bread or as is.
