Ingredients
- Zucchini - 200 grams
- Eggplant - 150 grams
- Bell pepper (red or green) - 100 grams
- Potato - 150 grams
- Onion - 50 grams
- Garlic - 2 cloves
- Olive oil - 3 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley - 2 tablespoons (chopped)
Steps
- Wash and peel the potato, zucchini, and eggplant. Cut all the vegetables into small, bite-sized pieces.
- Finely chop the onion and garlic.
- Heat olive oil in a large skillet over medium heat and add the chopped onion and garlic. Sauté until they are soft and translucent, about 3-4 minutes.
- Add the potato to the skillet and cook for about 5 minutes, stirring occasionally, until it starts to soften.
- Add the eggplant, zucchini, and bell pepper to the skillet. Season with salt, black pepper, and paprika. Cook for another 10-12 minutes, stirring occasionally until all vegetables are tender and slightly golden.
- Once the vegetables are cooked, sprinkle fresh parsley on top and mix well. Adjust seasoning if needed.
- Serve hot on a plate, and enjoy your Kahvaltı Kızartması with bread or as is.
