- Fine bulgur - 100 grams
- Boiling water - 200 ml
- Tomato - 1 medium, finely chopped
- Cucumber - 1 medium, finely chopped
- Red bell pepper - 1 medium, finely chopped
- Green onion - 2 stalks, finely chopped
- Fresh parsley - 30 grams, chopped
- Lemon juice - 3 tablespoons
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pomegranate molasses - 1 tablespoon
Steps
- In a large bowl, place the fine bulgur and pour the boiling water over it. Cover the bowl with a lid or plastic wrap and let it sit for about 10 minutes until the bulgur absorbs the water and becomes tender.
- After the bulgur has absorbed the water, fluff it with a fork to separate the grains.
- Add the chopped tomato, cucumber, red bell pepper, green onion, and parsley to the bulgur. Mix well to combine.
- In a small bowl, whisk together the lemon juice, olive oil, salt, black pepper, and pomegranate molasses.
- Pour the dressing over the bulgur and vegetable mixture. Toss everything together until well coated.
- Taste and adjust seasoning if necessary. Serve fresh or allow it to chill in the refrigerator for 15 minutes before serving.
