Ingredients

  • Fine bulgur - 100 grams
  • Boiling water - 200 ml
  • Tomato - 1 medium, finely chopped
  • Cucumber - 1 medium, finely chopped
  • Red bell pepper - 1 medium, finely chopped
  • Green onion - 2 stalks, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Lemon juice - 3 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pomegranate molasses - 1 tablespoon

Steps

  1. In a large bowl, place the fine bulgur and pour the boiling water over it. Cover the bowl with a lid or plastic wrap and let it sit for about 10 minutes until the bulgur absorbs the water and becomes tender.
  2. After the bulgur has absorbed the water, fluff it with a fork to separate the grains.
  3. Add the chopped tomato, cucumber, red bell pepper, green onion, and parsley to the bulgur. Mix well to combine.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, black pepper, and pomegranate molasses.
  5. Pour the dressing over the bulgur and vegetable mixture. Toss everything together until well coated.
  6. Taste and adjust seasoning if necessary. Serve fresh or allow it to chill in the refrigerator for 15 minutes before serving.
