Ingredients

  • Bulgur - 100 grams
  • Hot water - 200 milliliters
  • Tomato - 1 medium, finely chopped
  • Cucumber - 1 medium, finely chopped
  • Green bell pepper - 1, finely chopped
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 30 grams, finely chopped
  • Fresh mint - 10 grams, finely chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pomegranate molasses - 1 tablespoon (optional)

Steps

  1. In a bowl, combine bulgur and hot water, cover, and let it sit for about 15 minutes until the bulgur absorbs the water and softens.
  2. Once the bulgur is cooked, fluff it with a fork and let it cool slightly.
  3. Add the chopped tomato, cucumber, green bell pepper, red onion, parsley, and mint to the bulgur.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, black pepper, and pomegranate molasses (if using).
  5. Pour the dressing over the bulgur mixture and toss gently to combine all ingredients well.
