- Bulgur - 100 grams
- Hot water - 200 milliliters

- Cucumber - 1 medium, finely chopped
- Green bell pepper - 1, finely chopped
- Red onion - 1 small, finely chopped
- Fresh parsley - 30 grams, finely chopped
- Fresh mint - 10 grams, finely chopped
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pomegranate molasses - 1 tablespoon (optional)
Steps
- In a bowl, combine bulgur and hot water, cover, and let it sit for about 15 minutes until the bulgur absorbs the water and softens.
- Once the bulgur is cooked, fluff it with a fork and let it cool slightly.
- Add the chopped tomato, cucumber, green bell pepper, red onion, parsley, and mint to the bulgur.
- In a small bowl, whisk together olive oil, lemon juice, salt, black pepper, and pomegranate molasses (if using).
- Pour the dressing over the bulgur mixture and toss gently to combine all ingredients well.
