Ingredients

  • Yufka (thin pastry sheets) - 4 sheets
  • Olive oil - 4 tablespoons
  • Chopped spinach - 150 grams
  • Chopped green onions - 50 grams
  • Chopped parsley - 30 grams
  • Chili flakes - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sesame seeds - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the chopped spinach, green onions, parsley, chili flakes, salt, and black pepper.
  3. Lay one sheet of yufka on a clean surface and brush it lightly with olive oil.
  4. Place another sheet of yufka on top and brush it again with olive oil.
  5. Spoon a portion of the spinach mixture along one edge of the layered yufka, then roll it tightly into a log shape.
  6. Curve the rolled yufka into a spiral and place it on a baking tray lined with parchment paper.
  7. Repeat the process with the remaining yufka and filling to create additional spirals.
  8. Brush the tops of the spirals with olive oil and sprinkle sesame seeds on top.
  9. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  10. Remove from the oven and let cool slightly before serving.
