Ingredients

  • Kadayıf (shredded phyllo dough) - 200 grams
  • Unsalted butter - 50 grams, melted
  • Pistachios (finely chopped) - 50 grams
  • Walnuts (finely chopped) - 50 grams
  • Sugar - 100 grams
  • Water - 150 milliliters
  • Rose water - 1 tablespoon
  • Ground cinnamon - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a small saucepan, combine sugar and water. Bring to a boil, then reduce heat and let it simmer for about 10 minutes until slightly thickened. Add rose water and cinnamon, then remove from heat and let cool.
  3. In a large bowl, mix the shredded kadayıf with melted butter, ensuring the strands are well coated.
  4. Grease a small baking dish (around 20x20 cm) with some butter. Layer half of the buttered kadayıf in the dish, pressing it down to form an even layer.
  5. Spread the chopped pistachios and walnuts evenly over the kadayıf layer.
  6. Top with the remaining kadayıf, again pressing it down gently to create an even surface.
  7. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy on top.
  8. Once baked, remove from the oven and immediately pour the cooled syrup over the hot kadayıf.
  9. Let it absorb the syrup for about 10 minutes, then slice and serve warm.
