Ingredients
- Long-grain rice - 150 grams
- Zucchini - 200 grams, diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 300 milliliters
- Tomato paste - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dill - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and diced zucchini, cooking for another 5 minutes until the zucchini is slightly softened.
- Add the tomato paste, salt, black pepper, and drained rice to the pot, stirring well to combine all ingredients.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
- After 15 minutes, remove the pot from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, then stir in the chopped dill and lemon juice before serving.
