Ingredients

  • Long-grain rice - 150 grams
  • Zucchini - 200 grams, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 milliliters
  • Tomato paste - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dill - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and diced zucchini, cooking for another 5 minutes until the zucchini is slightly softened.
  4. Add the tomato paste, salt, black pepper, and drained rice to the pot, stirring well to combine all ingredients.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
  6. After 15 minutes, remove the pot from heat and let it sit, covered, for an additional 5 minutes.
  7. Fluff the rice with a fork, then stir in the chopped dill and lemon juice before serving.
