Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Zucchini - 200 grams, grated
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Vegan cheese (optional) - 50 grams

Steps

  1. In a small bowl, combine warm water and active dry yeast, stirring gently. Let it sit for 10 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Add the frothy yeast mixture and olive oil, then knead until a smooth dough forms (about 5-7 minutes).
  3. Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes, or until doubled in size.
  4. While the dough is rising, prepare the filling by heating a tablespoon of olive oil in a pan over medium heat. Sauté the chopped onion and minced garlic until translucent.
  5. Add the grated zucchini, tomato paste, black pepper, and paprika to the pan. Cook for about 5-7 minutes until the zucchini is tender. Stir in the chopped parsley and remove from heat.
  6. Preheat your oven to 220°C (428°F).
  7. Once the dough has risen, divide it into two equal portions. Roll out each portion into an oval shape on a lightly floured surface.
  8. Place the rolled dough on a baking sheet lined with parchment paper. Spoon the zucchini filling onto the center of each oval, leaving a border around the edges.
  9. Fold the edges of the dough over the filling to create a boat shape. Optionally, sprinkle vegan cheese on top of the filling.
  10. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
  11. Remove from the oven and let cool for a few minutes before slicing. Serve warm.
