Ingredients

  • Zucchini - 2 medium (approximately 400g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Tomato - 2 medium, diced
  • Red bell pepper - 1 medium, diced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried oregano - 1 teaspoon
  • Fresh basil - a handful, chopped
  • Parmesan cheese - 30g, grated (optional)

Steps

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create noodle-like strands and set aside.
  2. In a large skillet, heat olive oil over medium heat and add chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the diced red bell pepper and cook for another 3 minutes until softened.
  4. Stir in the diced tomatoes, salt, black pepper, and dried oregano. Cook for 5-7 minutes until the sauce thickens slightly.
  5. Add the spiralized zucchini to the skillet and toss gently to combine with the sauce. Cook for an additional 3-5 minutes until the zucchini is tender but still slightly crisp.
  6. Remove from heat and stir in fresh basil. Serve hot, topped with grated Parmesan cheese if desired.
