- Onion - 1 small, finely chopped
- Tomato - 2 medium, diced
- Red bell pepper - 1 medium, diced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried oregano - 1 teaspoon
- Fresh basil - a handful, chopped
- Parmesan cheese - 30g, grated (optional)
Steps
- Spiralize the zucchini using a spiralizer or a vegetable peeler to create noodle-like strands and set aside.
- In a large skillet, heat olive oil over medium heat and add chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the diced red bell pepper and cook for another 3 minutes until softened.
- Stir in the diced tomatoes, salt, black pepper, and dried oregano. Cook for 5-7 minutes until the sauce thickens slightly.
- Add the spiralized zucchini to the skillet and toss gently to combine with the sauce. Cook for an additional 3-5 minutes until the zucchini is tender but still slightly crisp.
- Remove from heat and stir in fresh basil. Serve hot, topped with grated Parmesan cheese if desired.
