  • Zucchini - 2 medium, spiralized
  • Ground beef or turkey - 200 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Feta cheese - 100 grams, crumbled
  • Egg - 1 large
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and sauté until translucent.
  2. Add minced garlic and ground beef or turkey to the skillet. Cook until browned, breaking up the meat with a spoon.
  3. Stir in tomato paste, dried oregano, salt, and black pepper. Cook for 3-4 minutes until the flavors meld. Remove from heat.
  4. In a large mixing bowl, combine spiralized zucchini with the cooked meat mixture. Add crumbled feta cheese and beaten egg, mixing well until combined.
  5. Preheat the oven to 180°C (350°F).
  6. Transfer the mixture into a greased baking dish and spread evenly.
  7. Bake in the preheated oven for 20 minutes, or until the top is slightly golden.
  8. Remove from the oven and sprinkle with fresh parsley before serving.
