- Zucchini - 2 medium, spiralized
- Ground beef or turkey - 200 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Olive oil - 2 tablespoons
- Feta cheese - 100 grams, crumbled
- Egg - 1 large
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat olive oil in a skillet over medium heat. Add chopped onion and sauté until translucent.
- Add minced garlic and ground beef or turkey to the skillet. Cook until browned, breaking up the meat with a spoon.
- Stir in tomato paste, dried oregano, salt, and black pepper. Cook for 3-4 minutes until the flavors meld. Remove from heat.
- In a large mixing bowl, combine spiralized zucchini with the cooked meat mixture. Add crumbled feta cheese and beaten egg, mixing well until combined.
- Preheat the oven to 180°C (350°F).
- Transfer the mixture into a greased baking dish and spread evenly.
- Bake in the preheated oven for 20 minutes, or until the top is slightly golden.
- Remove from the oven and sprinkle with fresh parsley before serving.
