- Zucchini - 300 grams, chopped
- Potato - 150 grams, peeled and diced
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Olive oil - 1 tablespoon
- Vegetable broth - 500 milliliters
- Salt - 1 teaspoon (adjust to taste)
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh dill - 1 tablespoon, chopped (for garnish)
Steps
- Heat olive oil in a large pot over medium heat. Add the diced onion and garlic, and sauté until they are translucent, about 5 minutes.
- Add the chopped zucchini, diced potato, and carrot to the pot. Cook for an additional 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Add salt, black pepper, and cumin.
- Reduce the heat to low and let the soup simmer for about 15-20 minutes, or until the vegetables are tender.
- Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Stir in the lemon juice and adjust seasoning if necessary.
- Serve hot, garnished with fresh dill.
