  • Carrot - 1 medium, diced
  • Olive oil - 1 tablespoon
  • Vegetable broth - 500 milliliters
  • Salt - 1 teaspoon (adjust to taste)
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh dill - 1 tablespoon, chopped (for garnish)

Steps

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and garlic, and sauté until they are translucent, about 5 minutes.
  2. Add the chopped zucchini, diced potato, and carrot to the pot. Cook for an additional 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and bring the mixture to a boil. Add salt, black pepper, and cumin.
  4. Reduce the heat to low and let the soup simmer for about 15-20 minutes, or until the vegetables are tender.
  5. Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  6. Stir in the lemon juice and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh dill.
