- Whole wheat pasta - 150 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Fresh basil - 10 leaves, chopped
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)
Steps
- Bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- While the pasta is cooking, spiralize the zucchini using a spiralizer or julienne peeler to create zucchini noodles.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they soften and release their juices.
- Stir in the spiralized zucchini and cook for an additional 3-4 minutes, tossing occasionally, until the zucchini is tender but still slightly crisp.
- Combine the cooked pasta with the zucchini and tomato mixture in the skillet. Add fresh basil, salt, and black pepper to taste. Toss everything together gently to combine.
- If desired, sprinkle nutritional yeast over the top before serving for a cheesy flavor.
- Serve immediately, garnished with extra basil if desired.
