Ingredients

  • Zucchini - 2 medium-sized (about 300 grams)
  • Whole wheat pasta - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Fresh basil - 10 leaves, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)

Steps

  1. Bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, spiralize the zucchini using a spiralizer or julienne peeler to create zucchini noodles.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they soften and release their juices.
  5. Stir in the spiralized zucchini and cook for an additional 3-4 minutes, tossing occasionally, until the zucchini is tender but still slightly crisp.
  6. Combine the cooked pasta with the zucchini and tomato mixture in the skillet. Add fresh basil, salt, and black pepper to taste. Toss everything together gently to combine.
  7. If desired, sprinkle nutritional yeast over the top before serving for a cheesy flavor.
  8. Serve immediately, garnished with extra basil if desired.
