Kabak Mücveri

Ingredients

  • Zucchini - 250 grams
  • Chickpea flour - 60 grams
  • Water - 60 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 2 tablespoons, chopped
  • Green onion - 2, finely chopped
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - for frying

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture and set aside.
  2. In a mixing bowl, combine the chickpea flour, water, chopped parsley, dill, green onion, minced garlic, salt, and black pepper. Mix until well combined.
  3. Add the grated zucchini to the mixture and stir until evenly mixed.
  4. Heat a non-stick skillet over medium heat and add a little olive oil.
  5. Spoon about 2 tablespoons of the zucchini mixture into the skillet for each fritter, flattening them slightly with a spatula.
  6. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  7. Transfer the cooked fritters to a plate lined with paper towels to absorb excess oil. Serve warm.
