Kabak Mücveri

Ingredients
- Zucchini - 250 grams
- Chickpea flour - 60 grams
- Water - 60 ml
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 2 tablespoons, chopped
- Green onion - 2, finely chopped
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - for frying
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture and set aside.
- In a mixing bowl, combine the chickpea flour, water, chopped parsley, dill, green onion, minced garlic, salt, and black pepper. Mix until well combined.
- Add the grated zucchini to the mixture and stir until evenly mixed.
- Heat a non-stick skillet over medium heat and add a little olive oil.
- Spoon about 2 tablespoons of the zucchini mixture into the skillet for each fritter, flattening them slightly with a spatula.
- Cook for about 3-4 minutes on each side, or until golden brown and crispy.
- Transfer the cooked fritters to a plate lined with paper towels to absorb excess oil. Serve warm.
