Ingredients

  • Zucchini - 2 medium
  • Long-grain rice - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Fresh parsley - 30 grams, chopped
  • Fresh dill - 20 grams, chopped
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Vegetable broth - 200 ml
  • Lemon - 1, juiced

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Wash the zucchinis and cut off the tops, scooping out the flesh with a spoon, leaving about 1 cm of the skin intact to form a shell.
  3. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and translucent.
  4. Stir in the diced tomato, cooking for an additional 2-3 minutes until it breaks down slightly.
  5. Add the long-grain rice, paprika, salt, and black pepper, mixing well to combine. Pour in the vegetable broth and bring to a simmer. Cover and cook for about 10-15 minutes, or until the rice is tender and liquid is absorbed.
  6. Remove the skillet from heat and stir in the chopped parsley, dill, and lemon juice, mixing everything well.
  7. Stuff the zucchini shells with the rice mixture, packing it tightly but leaving a little space at the top.
  8. Place the stuffed zucchinis in a baking dish. Drizzle with the remaining olive oil and add a splash of water to the bottom of the dish to prevent sticking.
  9. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10 minutes until the zucchinis are tender.
  10. Serve warm, garnished with additional fresh herbs if desired.
