Ingredients
- Zucchini - 300 grams
- Chickpeas - 100 grams (cooked)
- Breadcrumbs - 50 grams
- Feta cheese - 50 grams (crumbled)
- Egg - 1 large
- Garlic - 1 clove (minced)
- Fresh parsley - 2 tablespoons (chopped)
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 (sliced)
- Cucumber - 1/2 (sliced)
- Yogurt - 100 grams (for sauce)
- Lemon juice - 1 tablespoon
Steps
- Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
- In a mixing bowl, combine the grated zucchini, cooked chickpeas (mashed), breadcrumbs, crumbled feta cheese, minced garlic, chopped parsley, cumin, salt, and black pepper.
- Crack in the egg and mix until all ingredients are well combined.
- Form the mixture into 2 patties.
- Heat olive oil in a frying pan over medium heat and cook the patties for about 4-5 minutes on each side or until they are golden brown.
- While the patties are cooking, prepare the yogurt sauce by mixing yogurt with lemon juice and a pinch of salt.
- Toast the whole wheat burger buns lightly on a pan or grill.
- Assemble the burgers by placing the lettuce on the bottom bun, adding the zucchini patty, and topping it with tomato and cucumber slices.
- Drizzle the yogurt sauce over the top and cover with the top bun. Serve immediately.
