Ingredients
- Eggplant - 2 medium
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 200°C (400°F).
- Wash the eggplants and pat them dry. Prick the skin several times with a fork to prevent them from bursting during roasting.
- Place the eggplants on a baking sheet and drizzle with 1 tablespoon of olive oil, turning to coat them evenly.
- Roast the eggplants in the preheated oven for about 25 minutes, or until the skins are charred and the flesh is tender.
- While the eggplants are roasting, prepare the garlic by mincing it finely.
- Once the eggplants are done, remove them from the oven and let them cool for a few minutes.
- Peel the charred skin off the eggplants and place the flesh in a bowl.
- Add the minced garlic, lemon juice, salt, black pepper, and the remaining 1 tablespoon of olive oil to the bowl. Mash everything together until combined but still slightly chunky.
- Transfer the mixture to a serving plate and garnish with chopped parsley.
- Serve warm or at room temperature with pita bread or as part of a mezze platter.
