Ingredients

Steps

  2. Wash the red bell peppers and cut them in half lengthwise, removing the seeds and stems.
  3. Place the pepper halves cut side up on a baking sheet, and drizzle with olive oil, minced garlic, salt, and black pepper.
  4. Roast the peppers in the preheated oven for about 20-25 minutes, or until the skins are blistered and the peppers are tender.
  5. Remove the peppers from the oven and let them cool for a few minutes.
  6. Once cooled, drizzle with lemon juice and sprinkle with chopped parsley before serving.
