- Zucchini - 150 grams
- Eggplant - 150 grams
- Red bell pepper - 100 grams
- Green bell pepper - 100 grams
- Potato - 150 grams
- Chickpea flour - 50 grams
- Water - 100 ml
- Olive oil - 100 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley - 10 grams
Steps
- Wash and slice the zucchini, eggplant, red bell pepper, green bell pepper, and potato into thin rounds or strips.
- In a bowl, mix the chickpea flour, water, salt, black pepper, and paprika to create a smooth batter.
- Heat half of the olive oil in a large frying pan over medium heat.
- Dip the sliced vegetables into the batter, allowing excess to drip off, and carefully place them in the hot oil.
- Fry the vegetables in batches until golden and crispy, about 3-4 minutes on each side. Add more oil as needed.
- Once cooked, transfer the fried vegetables to a plate lined with paper towels to drain excess oil.
- Finely chop the fresh parsley and sprinkle it over the fried vegetables for garnish.
- Serve the Kızartma Tabağı warm, accompanied by fresh bread and a side of olives for a complete breakfast experience.
