Ingredients

  • Zucchini - 150 grams
  • Eggplant - 150 grams
  • Red bell pepper - 100 grams
  • Green bell pepper - 100 grams
  • Potato - 150 grams
  • Chickpea flour - 50 grams
  • Water - 100 ml
  • Olive oil - 100 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - 10 grams

Steps

  1. Wash and slice the zucchini, eggplant, red bell pepper, green bell pepper, and potato into thin rounds or strips.
  2. In a bowl, mix the chickpea flour, water, salt, black pepper, and paprika to create a smooth batter.
  3. Heat half of the olive oil in a large frying pan over medium heat.
  4. Dip the sliced vegetables into the batter, allowing excess to drip off, and carefully place them in the hot oil.
  5. Fry the vegetables in batches until golden and crispy, about 3-4 minutes on each side. Add more oil as needed.
  6. Once cooked, transfer the fried vegetables to a plate lined with paper towels to drain excess oil.
  7. Finely chop the fresh parsley and sprinkle it over the fried vegetables for garnish.
  8. Serve the Kızartma Tabağı warm, accompanied by fresh bread and a side of olives for a complete breakfast experience.
