Ingredients

  • Zucchini - 1 medium, sliced into thin rounds
  • Eggplant - 1 small, sliced into thin rounds
  • Bell pepper - 1 medium, sliced into thin strips
  • Carrot - 1 medium, sliced into thin rounds
  • Chickpea flour - 100 grams
  • Rice flour - 50 grams
  • Water - 150 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Vegetable oil - for frying

Steps

  1. Prepare the vegetables by slicing them into thin rounds or strips and set aside.
  2. In a mixing bowl, combine chickpea flour, rice flour, salt, black pepper, and paprika.
  3. Gradually add water to the flour mixture while whisking until you achieve a smooth, batter-like consistency.
  4. Heat vegetable oil in a deep pan over medium heat until it reaches about 180°C (350°F).
  5. Dip each vegetable piece into the batter, allowing excess to drip off, then carefully place them into the hot oil.
  6. Fry the vegetables in batches, making sure not to overcrowd the pan, for about 3-4 minutes or until golden brown.
  7. Use a slotted spoon to remove the fried vegetables and place them on paper towels to drain excess oil.
  8. Serve hot with a side of yogurt or tahini sauce for dipping.
