- Zucchini - 1 medium, sliced into thin rounds
- Eggplant - 1 small, sliced into thin rounds
- Bell pepper - 1 medium, sliced into thin strips
- Carrot - 1 medium, sliced into thin rounds
- Chickpea flour - 100 grams
- Rice flour - 50 grams
- Water - 150 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Vegetable oil - for frying
Steps
- Prepare the vegetables by slicing them into thin rounds or strips and set aside.
- In a mixing bowl, combine chickpea flour, rice flour, salt, black pepper, and paprika.
- Gradually add water to the flour mixture while whisking until you achieve a smooth, batter-like consistency.
- Heat vegetable oil in a deep pan over medium heat until it reaches about 180°C (350°F).
- Dip each vegetable piece into the batter, allowing excess to drip off, then carefully place them into the hot oil.
- Fry the vegetables in batches, making sure not to overcrowd the pan, for about 3-4 minutes or until golden brown.
- Use a slotted spoon to remove the fried vegetables and place them on paper towels to drain excess oil.
- Serve hot with a side of yogurt or tahini sauce for dipping.
