Ingredients

  • Cornelian cherries - 250 grams
  • Water - 500 ml
  • Sugar - 100 grams
  • Lemon juice - 1 tablespoon
  • Cinnamon stick - 1
  • Cloves - 2

Steps

  1. Rinse the cornelian cherries thoroughly under cold water and remove any stems.
  2. In a medium saucepan, combine the cornelian cherries and water. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat and simmer for about 15 minutes, until the cherries are soft.
  4. Remove the saucepan from heat and let it cool slightly. Then, strain the mixture through a fine mesh sieve into a bowl, pressing the cherries to extract as much juice as possible.
  5. In the same saucepan, combine the extracted juice, sugar, lemon juice, cinnamon stick, and cloves. Heat over low heat, stirring until the sugar is fully dissolved.
  6. Once dissolved, increase the heat and bring the mixture to a gentle boil for another 5 minutes.
  7. Remove from heat and let it cool. Discard the cinnamon stick and cloves.
  8. Serve chilled or at room temperature in small glasses, garnished with fresh cherries if desired.
