Ingredients
- Cornelian cherries - 250 grams
- Water - 500 ml
- Sugar - 100 grams
- Lemon juice - 1 tablespoon
- Cinnamon stick - 1
- Cloves - 2
Steps
- Rinse the cornelian cherries thoroughly under cold water and remove any stems.
- In a medium saucepan, combine the cornelian cherries and water. Bring to a boil over medium heat.
- Once boiling, reduce the heat and simmer for about 15 minutes, until the cherries are soft.
- Remove the saucepan from heat and let it cool slightly. Then, strain the mixture through a fine mesh sieve into a bowl, pressing the cherries to extract as much juice as possible.
- In the same saucepan, combine the extracted juice, sugar, lemon juice, cinnamon stick, and cloves. Heat over low heat, stirring until the sugar is fully dissolved.
- Once dissolved, increase the heat and bring the mixture to a gentle boil for another 5 minutes.
- Remove from heat and let it cool. Discard the cinnamon stick and cloves.
- Serve chilled or at room temperature in small glasses, garnished with fresh cherries if desired.
