- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 7 grams
- Olive oil - 1 tablespoon

- Red bell pepper - 50 grams, diced
- Zucchini - 50 grams, grated
- Mushrooms - 100 grams, finely chopped
- Onion - 50 grams, finely chopped
- Garlic - 1 clove, minced
- Tomato paste - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
Steps
- In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a lightly oiled bowl, cover with a damp cloth, and let it rise for 30 minutes in a warm place.
- While the dough is rising, prepare the filling. In a skillet over medium heat, sauté the onion and garlic in a little olive oil until translucent.
- Add the diced red bell pepper, grated zucchini, and chopped mushrooms to the skillet. Cook for about 5-7 minutes until softened.
- Stir in the tomato paste, ground cumin, paprika, black pepper, and chopped parsley. Cook for an additional 2-3 minutes, then remove from heat and let cool slightly.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece into an oval shape about 1/2 cm thick.
- Place the rolled dough on a baking sheet lined with parchment paper. Spoon the vegetable filling along the center of each oval, leaving the edges clear.
- Fold the edges of the pide over the filling, pinching them together to create a boat shape.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
- Remove from the oven and drizzle with lemon juice before serving.
