Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Red bell pepper - 50 grams, diced
  • Zucchini - 50 grams, grated
  • Mushrooms - 100 grams, finely chopped
  • Onion - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Tomato paste - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a lightly oiled bowl, cover with a damp cloth, and let it rise for 30 minutes in a warm place.
  4. While the dough is rising, prepare the filling. In a skillet over medium heat, sauté the onion and garlic in a little olive oil until translucent.
  5. Add the diced red bell pepper, grated zucchini, and chopped mushrooms to the skillet. Cook for about 5-7 minutes until softened.
  6. Stir in the tomato paste, ground cumin, paprika, black pepper, and chopped parsley. Cook for an additional 2-3 minutes, then remove from heat and let cool slightly.
  7. Preheat the oven to 220°C (428°F).
  8. Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece into an oval shape about 1/2 cm thick.
  9. Place the rolled dough on a baking sheet lined with parchment paper. Spoon the vegetable filling along the center of each oval, leaving the edges clear.
  10. Fold the edges of the pide over the filling, pinching them together to create a boat shape.
  11. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
  12. Remove from the oven and drizzle with lemon juice before serving.
