Ingredients

  • Pasta (whole wheat or gluten-free) - 200 grams
  • Green lentils (dry) - 100 grams
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Tomato paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Red bell pepper (diced) - 1 medium
  • Carrot (grated) - 1 medium
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - for garnish
  • Water - 750 ml

Steps

  1. Rinse the green lentils under cold water, then place them in a pot with 500 ml of water. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until tender. Drain and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and diced red bell pepper to the pot, cooking for another 2-3 minutes until the pepper softens.
  4. Stir in the grated carrot, tomato paste, cumin, paprika, salt, and black pepper. Cook for 2-3 minutes, allowing the spices to become fragrant.
  5. Add the cooked lentils to the pot and mix well to combine all the ingredients.
  6. In a separate pot, bring 1 liter of water to a boil, add the pasta, and cook according to the package instructions until al dente. Drain the pasta.
  7. Combine the drained pasta with the lentil mixture, stirring to coat the pasta evenly with the sauce.
  8. Serve hot, garnished with freshly chopped parsley.
