- Pasta (whole wheat or gluten-free) - 200 grams
- Green lentils (dry) - 100 grams
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Tomato paste - 2 tablespoons
- Olive oil - 2 tablespoons
- Red bell pepper (diced) - 1 medium
- Carrot (grated) - 1 medium
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley (chopped) - for garnish
- Water - 750 ml
Steps
- Rinse the green lentils under cold water, then place them in a pot with 500 ml of water. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until tender. Drain and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced red bell pepper to the pot, cooking for another 2-3 minutes until the pepper softens.
- Stir in the grated carrot, tomato paste, cumin, paprika, salt, and black pepper. Cook for 2-3 minutes, allowing the spices to become fragrant.
- Add the cooked lentils to the pot and mix well to combine all the ingredients.
- In a separate pot, bring 1 liter of water to a boil, add the pasta, and cook according to the package instructions until al dente. Drain the pasta.
- Combine the drained pasta with the lentil mixture, stirring to coat the pasta evenly with the sauce.
- Serve hot, garnished with freshly chopped parsley.
