- Canned diced tomatoes - 200 grams
- Red pepper flakes - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dried oregano - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Grated Parmesan cheese - 30 grams (optional)
Steps
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic and cook for another 1 minute until fragrant.
- Add the lamb mince to the skillet, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.
- Stir in the tomato paste, canned diced tomatoes, red pepper flakes, salt, black pepper, and oregano.
- Reduce heat to low and let the sauce simmer for about 10 minutes, stirring occasionally.
- While the sauce simmers, spiralize the zucchini to create zoodles (zucchini noodles).
- In a separate pan, lightly sauté the zoodles in a small amount of olive oil for about 2-3 minutes until just tender.
- Serve the lamb sauce over the zoodles and garnish with fresh parsley and grated Parmesan cheese if desired.
