Ingredients

  • Lamb mince - 250 grams
  • Zucchini - 2 medium, spiralized

  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Canned diced tomatoes - 200 grams
  • Red pepper flakes - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dried oregano - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Grated Parmesan cheese - 30 grams (optional)

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Stir in the minced garlic and cook for another 1 minute until fragrant.
  4. Add the lamb mince to the skillet, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.
  5. Stir in the tomato paste, canned diced tomatoes, red pepper flakes, salt, black pepper, and oregano.
  6. Reduce heat to low and let the sauce simmer for about 10 minutes, stirring occasionally.
  7. While the sauce simmers, spiralize the zucchini to create zoodles (zucchini noodles).
  8. In a separate pan, lightly sauté the zoodles in a small amount of olive oil for about 2-3 minutes until just tender.
  9. Serve the lamb sauce over the zoodles and garnish with fresh parsley and grated Parmesan cheese if desired.
